Here’s how you can make peanut butter without a high powered blender:
• ½ Cup Dry Roasted Nuts
• ¼ Cup Vegetable Oil
• ⅓ Cup Granulated Sugar
• Pinch of Kosher Salt
• Electric Hand Mixer
• Stand Mixer
In a medium-sized pot, heat the oil over low heat. Stir occasionally so that the oil doesn’t burn from heat once hot but before smoking. Set aside.
Add the sugar and constantly stir until dissolved. Turn off the burner. Let cool slightly.
Meanwhile, place the nuts into a large bowl. Pour the cooled oil over the top and mix vigorously with a wooden spoon. Continue stirring until everything comes together.
Transfer the contents of the bowl to another more giant bowl. Use a rubber spatula to scrape down any remaining bits stuck to the bottom of the first bowl. Repeat scraping until all the residue is removed.
Now transfer the mixture back to the original bowl. Using the same rubber spatula, gently fold the mixture until thoroughly blended.
Once thoroughly mixed, pour it into your container of choice. Cover tightly and refrigerate overnight.
Transfer to the freezer if necessary. Store in the freezer for about two weeks. The next day, remove from refrigerator and allow to come to room temperature.
